You like-a some eggs?
Yeah…We like-a some eggs. We like ‘em cooked up real nice. Whatta ya got there, tootsie?

Well whatever it is, you better scarf it down fast because this chick has a lot going on. She’s a blogger, a photographer and a model. She blogs so fast, she does it by blackberry. When I attempted to get the details for this particular dish in this particular BedHead photo, I got a slap-dash recipe that went something like this:
“…the omelet had cheese, onion, broccoli, egg, balsamic
vinegar, garlic…i think that’s it…maybe sage? Salt
and pepper?…”
I don’t know, I wasn’t there. Right. Don’t worry… Thankfully, I have a little time on my hands so I’ll re-create this omelette from the photographic evidence and perhaps tell you a bit more about Leora Zellman…After the jump…
Of course..there’s broccoli, a fibrous vegetable to get us started. As you can see, Leora then browned the onions in the pan. I thought I spied an olive oil bottle in the background so imagine that’s her oil for this dish, very nice. As you can see, she eventually poured in the eggs, the cheese, garlic, sage and drizzled it with balsamic vinegar. Funny, I have never used vinegar in an omelette before, maybe that explains why this one came out looking like this: 
Not exactly an omelette. More like a scrambled eggs with cheese and broccoli kind of thing. Very appetizing none the less, you have to give her points for the ketchup-accent. A little Heinz flair and a nice little barrier to separate those tater tots. I count 8 of them here. I believe a proper portion of tots is 12. I love tots!
But really, Leora is in to some interesting stuff. Check out her blog. She even does TV. As for the omelette? I’ll have to conduct a re-creation in the lab here at BedHeadquarters and get back to you on that…
